What to Expect

  

    Relax in your own kitchen around your like-mined foodie friends, get acquainted with the recipes you choose and the process of hands-on cooking experience with Chef George.

  

    Explore the rich and complex flavors of the cuisine of the peasants, Arcadian’s “Cajun”, the French Quarter “Creole” as Creole cuisine is all about blending flavors, spices, herbs, and ingredients in unexpected ways. One of the most misunderstood cuisines around.

  

    Chef George will introduce you to traditional recipes adapted to fit modern kitchens and local grocery store ingredients. No need for a swamp near you as this is where Cajuns shop for ingredients. You’ll find all the ingredients needed in your local grocery store or farmers market to create these classic dishes while working alongside classmates as you practice making everything from the classic Roux, the importance of the “Trinity” extracting the best flavors from seasonings, how to prepare a slow cooked roux, smothering sauces, and seafood and chicken homemade broth, searing seafood to perfection and finishing with a flaming bananas foster dessert over ice cream. These small intimate classes have a minimum of 6 and a maximum of 10 spots. Prices include all the ingredients required to create your menu of chose, wine or a local beer.
 

    Under the guarantee at the end change to I’ll tell you what kitchen tools you’ll need, and I will bring the rest.

Teaching Professional Techniques

The chemistry of seasonings, and plating to achieve that “WOW” factor of presentation. Your group will cut, slice, chop, sauté, season, stir, taste and plate a complete menu of choice. Three hours of approximate time enriching your knowledge of cooking this flavorful cuisine.


The last part of the class, and possibly everyone’s favorite will include teaching the class how to make a flaming Bananas Foster over ice cream.


Class finishes with a sit-down meal enjoying the fruits of love and labor with your fellow guest toasting a nice wine to your beautiful creations.
